We love to entertain, but time is hard to come by in the real estate business, so we tend toward serving simple fare…salads tossed minutes before guests arrive and meat fresh from the grill. We love Tex-Mex, though, and any recipe that looks like it might fit into our hectic lifestyle is a keeper. Here are a few that fill that bill.

Spring Veggie Recipes
Springtime means fresh vegetables in East Texas, and just in time are these recipes from Laura Swayne for Honey-Roasted Veggies, Roasted Cauliflower with Herbs, and Best-Ever Carrot Cake.
Spring Blossoms: Our Peach Tree
East Texas is peach country. There are farms here where you can pick your own peaches. We have a small peach tree in our sideyard. It hasn’t done well the past couple of summers…too dry…but we’ve had some rain this year and if the blossoms are a fair indicator, we may have some cobbler later this summer.
Farm to Table
Andrea loves the taste of fresh basil and rosemary so we usually have a pot of each growing somewhere around our house, but Robyn Roehm Cannon has taken it to a whole new level. If you enjoy cooking with fresh herbs, you might just want to create your own herb garden.
Sweet Smells of Spring
The flock of robins in our sideyard yesterday sent me a message…time to clean out the boat, grease the reels, charge the camera batteries, and get out the shorts and sandals.
We’re having friends over for brunch next Saturday so Caroline Ford’s piece on using the bounty of the season to create a fine meal is timely.

“Fall Back” Recipes
Today is the day we “fall back”, which is a pretty good indication that the leaves are turning and I’ll be out with my camera later today, may even take some fishing gear down to the lake. So recipes that aren’t TOO time-intensive sound about right, and Caroline Ford has come up with four healthy and delicious ones I might be able to manage. See if you like them as much as I do. ~ Larry

New England Clam Bake in Texas
Even if you don’t live near the shoreline, creating the mood of the salty New England coast in your own backyard is easier than you might think. The New England Clam Bake is a traditional method of cooking fresh local seafood and vegetables on the beach, in a fire pit dug in the sand and covered with seaweed. I’ve provided two preparation methods here: one for those on the shoreline, and one for those of us who don’t have access to the beach.Next Time You’re In Arp, Try Thee Kafe
If you like good home-cooking and you’re in Arp around meal-time, don’t miss Thee Kafe at 103 W Longview St (903.859.2026). Carole Lee uses her grandmother’s recipes…the chicken *** wrapped around a jalapeno wrapped with bacon is delicious. And the coconut cream pie is something to remember!

Friday night is “Rib-Eye Night” at Thee Kafe. We went over with another couple recently and had a very good time. The football game was out-of-town so we had plenty of room and were served quickly.
